Poached Egg on Toast w. Tomato and Fresh Basil

1 slice Ezekiel bread
1 slice tomato
freshly grated parmesan
2 fresh basil leaves
Preheat oven to 400. Heat water in pot to poach egg. Place tomato on top of bread and sprinkle with shaved parmesan. Heat in oven while poaching egg in boiling water. After about 2 minutes, place egg on top of tomato and sprinkle with chopped basil leaves. Bake another 2 to 3 minutes.
I thought I was being cool buying a whole basil plant at the store a week ago and now I haven’t been cooking anything, so there is just an overgrown herb on my window sill waiting to be picked for a team. So I tried to incorporate it in my breakfast.
